Rio Grande Mexican Restaurant, one of Colorado’s most beloved restaurants, has just opened its newest location in Frisco, Colorado. After 28 years of operating successful Mexican food restaurants, this is the Rio’s seventh location, with other locations including Fort Collins, Boulder, Greeley, Denver, Lone Tree, and Steamboat Springs. What makes the Rio Grande Mexican Restaurant stand out is its focus and dedication to fresh, homemade ingredients. Not only are the tortillas made fresh daily, but the salsas, guacamole, and all other sauces are made fresh before every shift. Some of their specialties include fajitas and burritos, but don’t avoid exploring the menu – all of the menu items are fantastic. They are renowned for their Classic Margaritas (delicious & strong – there is a limit of three per visit), but they also have a number of amazing handcrafted margaritas and cocktails, as well as a vast selection of tequilas. The Frisco location has melded a comfortable, open atmosphere with impressive views of the surrounding mountains from the dining areas, patio, and spectacular deck.
